Pisces Restaurant to replace never built Fiola Sto on Wynn Las Vegas | Issue

When the boat rock, Wynn Las Vegas keeps its sea legs.

And then just a month after the Las Vegas Review Journal reported that Michelin-star chef Fabbio Trabocchi had abandoned plans to open Fiola Sto in the old restaurant by the lake, Wynn Tuesday announced that a replacement vessel was in work for the space on the property Lake of dreams.

The new restaurant – Pisces Bar and Seafare – will debut this spring. Unlike Fiola Mare, which would be developed by external talent, the fishermen return to Wynn’s long -lasting (and successful) practice to create concepts internally.

On the menu

Executive manager Martin Heierling leads the kitchen. Heierling was last with the noble 33 group, whose portfolio includes Toca Madera in Vegas, Casa Madera in West Hollywood and Sparrow Italia in London and Miami.

Caviar and Crudo dishes, seafood plates, dry-aged fish, fresh pasta and desserts from the Wynn Executive Pastry Jennifer Yee are among the menu height points. The property’s mastermixologist, Mariena Mercer Boarini, designs cocktails for the fishermen who pay tribute to the sea and the beach. A wine list complete the Drink Program.

Out to sea

The restaurant’s design combines what Todd-Avery Lenahan, President and Chief Creative Officer for Wynn Design & Development, is called “Spectacle and Subtiley.”

An entry Rotunda, with embroidered velvet walls and ebony wood accents, leads to a double-height dining room with a seafood screen, a spacious bar, 400 murano glass orbs (so bubbles in the burning?), Castrocks and a roof in the ceiling in Dijon Suede. Mosaic flooring, mirrored holes, ceramic siren vases and views of the lake helps the restaurant to sea.

Wynn will release more information about the fishermen in the coming weeks.
